Ingredients:
1 cup organic dry maize kernels (whole)
1-2 teaspoons of ghee or oil (optional, you can skip if you want to dry fry)
Salt or spices (optional, to taste)
Method:
1. Heat the Pan: Start by heating a heavy-bottomed pan or wok over medium heat.
2. Optional Oil: If you’re using oil, add it to the pan and heat for a minute. If you're dry frying, skip this step.
3. Add Maize Kernels: Add the dry maize kernels to the hot pan. Stir them regularly to avoid burning.
4. Fry the Maize: Continue to cook the kernels, shaking or stirring every few minutes, for about 15–20 minutes or until they pop and turn golden brown. You’ll notice them begin to puff up or pop a little.
5. Optional Spices: You can add salt or your choice of spices during the last few minutes of frying to enhance the flavor.
6. Cool and Serve: Once done, remove the fried maize from the pan, and let it cool down before serving.
This method results in a crunchy snack or can be used in recipes that call for roasted maize.
